Sprouted Butternut & Ricotta Ravioli – 250g (frozen)

You may already know our member, Richard from the sprouted flour and sprouted hummus he prepares for the Good Food Club. And you may know Lapo, the head chef and owner of Lapo’s Kitchen at the Josephine Mill in Newlands where we once had Culture Club Cheese headquarters. This unique product is a collaboration between two like-minded friends, who bring together their passion and craft in the form of a sprouted, artisan pasta with real health benefits.
This pasta is a labour of love.  Richard takes organic, locally grown wheat berries and soaks, sprouts, and dehydrates them over four days.  Then it’s over to Lapo! He stone mills the flour, and channels generations of Italian heritage through his fingertips to create an authentic, handmade ravioli in his iconic kitchen beside the Liesbeek River.
So, what is the benefit of sprouted pasta?
Wheat has a built-in defence system designed to support germination and resist assimilation in the body. The main offender is phytic acid, an anti-nutrient that limits your body’s ability to absorb nutrients both from the wheat itself as well as from the foods you eat along with it.  When we sprout the wheat for our pasta, we activate its true nutritional potential by transforming it from a hard-to-assimilate grain into an easy-to-digest vegetable, with low GI and high bioavailability.
The benefits of sprouted wheat:
  • Greatly increases bioavailability of locked-in vitamins and minerals
  • Greatly diminishes harmful enzymes and anti-nutrients that limit nutrient absorption
  • Easy to digest and more filling: converts pancreas stressing complex carbohydrates into low GI vegetable sugars
  • Can eliminate wheat related allergies and inflammation
  • Contains 100% of the wheat berry (we do not need to remove the wheatgerm)
Our ravioli is frozen immediately after preparation and is packed in compostable gusset bags manufactured from wood cellulose. *Please note that we are trying to source an organic ricotta cheese; otherwise, all of the ingredients in our ravioli are 100% organic.
