Raw cow, Waterkloof Wine Estate, Somerset West Waterkloof Wine Estate’s Healey’s mature, raw milk, cloth-bound cheddar has garnered numerous awards for being possibly the only cheddar maker in the country that uses the traditional “cheddaring” technique, in addition to binding the cheese with cloth and maturing it for minimum 12 months, as they do in England where this cheese originates from. The result in their process is a distinctly strong, tangy fruity cheese, full of flavour.
Whole cheese is roughly 9 kilos and can be ordered if you leave special instructions at checkout.
Cow’s are from a neighbouring farm, 30 km away, and are fed on grass and were only supplemented during times of drought with non-GMO feed. They are hormone and antibiotic free.
